  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 1/4 teaspoon garam masala
  • 2 tablespoons warm milk
  • A few saffron strands, optional
  • 1 tablespoon ghee, for layering

How to Make

1. Marinate the Chicken

Add chicken, curd, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, lemon juice, and salt to a bowl.

Mix well and coat the chicken properly. Cover and rest for at least 30 minutes. For better flavor, marinate for 2 to 3 hours.

2. Wash and Soak the Rice

Wash the basmati rice 3 to 4 times until the water looks almost clear. Soak the rice for 20 to 30 minutes. This helps the rice cook long and fluffy.

3. Cook the Rice

Boil 6 cups of water in a large pot. Add bay leaf, cardamoms, cloves, cinnamon, and salt(Make the water taste like sea water ).

Add the soaked rice and cook until the rice is about 70% cooked. The rice grain should break with a little pressure but should not become soft or mushy.

Drain the rice and keep it aside.

4. Fry the Onions

Heat oil or ghee in a heavy-bottomed pan. Add sliced onions and fry on medium heat until golden brown.

Remove half of the fried onions and keep them aside for layering.

5. Cook the Chicken

In the same pan, add green chilies and chopped tomato. Cook for 2 to 3 minutes until the tomato becomes soft.

Add the marinated chicken. Cook on medium heat for 8 to 10 minutes, stirring sometimes.

Cover and cook for another 8 to 10 minutes, or until the chicken is almost cooked and the masala looks thick. Do not keep too much watery gravy.

6. Layer the Biryani

Keep the flame low. Spread the chicken evenly in the pan.

Add half of the cooked rice over the chicken. Sprinkle some coriander leaves, mint leaves, fried onions, and a little garam masala.

Add the remaining rice on top. Add the rest of the fried onions, coriander leaves, mint leaves, ghee, and saffron milk if using.

7. Dum Cook the Biryani

Cover the pan with a tight lid. Cook on very low heat for 18 to 20 minutes.

Turn off the heat and let the biryani rest for 10 minutes before opening the lid.

Gently mix from the sides and serve hot.

Tips

  • Use good-quality basmati rice for the best texture and aroma.
  • Do not overcook the rice before layering. It should be only 70% cooked.
  • Use a heavy-bottomed pan so the biryani does not burn from the bottom.
  • Marinating the chicken makes it soft and flavorful.
  • Keep the chicken masala thick before layering. Too much liquid can make the biryani soggy.
  • Resting the biryani after cooking helps the flavor settle properly.
  • Bone-in chicken gives more flavor, but boneless chicken also works well.

Serving Suggestions

Serve chicken biryani hot with onion raita, cucumber raita, plain curd, salad, or boiled eggs.

You can also serve it with mint chutney, papad, or a simple onion and lemon salad. For a full meal, pair it with chicken curry or salan.

Storage

Store leftover chicken biryani in an airtight container in the refrigerator for up to 2 days.

Reheat it in a pan on low heat with a sprinkle of water. You can also microwave it until warm. Do not reheat again and again, as the rice can become dry and the chicken may lose texture.
