Kashmiri Rogan Josh

Kashmiri Rogan Josh Recipe (Aromatic Red Lamb Curry)

Kashmiri Rogan Josh is a rich red meat curry featuring tender chunks of lamb braised in a yogurt and spice-infused gravy. Unlike many restaurant versions thickened with heavy creams, this preparation achieves its deep color and distinct flavor primarily from Kashmiri red chili powder and whole warming spices.

Making this dish successfully comes down to patience: browning the meat properly, letting the yogurt reduce slowly without curdling, and simmering until the lamb is thoroughly tender and the aromatic oils rise to the surface.

Why This Recipe Works

  • Blooming whole spices in oil at the start builds a deep flavor base without burning the ground spices.
  • Whisking the yogurt before adding it to the warm pot prevents it from splitting or curdling.
  • Simmering the curry slowly on low heat allows the lamb to break down and become tender while thickening the gravy naturally.

Ingredient Notes

  • Lamb: Bone-in shoulder or leg pieces work best, as the bones contribute extra flavor and richness to the gravy as they simmer.
  • Kashmiri red chili powder: This specific chili provides the signature vibrant red color and a mild, smoky heat rather than scorching spice. Regular chili powder is much hotter and will change the flavor balance.
  • Yogurt: Use plain, unflavored yogurt at room temperature. Greek yogurt or whisked whole-milk yogurt works well.
  • Ratanjot (alkanet root): Traditionally used in Kashmir to impart a deep red hue to the oil. If you cannot find it, the Kashmiri chili powder provides sufficient color, so it can be omitted.

If You’re Cooking Outside India

  • Kashmiri red chili powder: Found in South Asian grocery stores or online. Look for brightly colored, finely ground Kashmiri mirch.
  • Ratanjot: Optional bark-like roots found in Indian specialty markets. Omit if unavailable.
  • Whole spices (black cardamom, green cardamom, cloves, cinnamon): Available at most well-stocked supermarkets in the international spice aisle or Indian grocery stores.

How to Make Kashmiri Rogan Josh

Aromatic Base

Warm oil in a heavy-bottomed pot and briefly sizzle whole spices until fragrant.

Browning the Meat

Add the lamb pieces and brown them well on all sides in the spiced oil.

Yogurt Incorporation

Lower the heat and stir in whisked yogurt gradually to prevent curdling, cooking until the oil separates.

Simmering

Add water, cover, and simmer on low heat until the meat is fork-tender and the sauce is rich.

Cooking Tips

  • Keep the heat low when adding the yogurt, or remove the pot from the stove temporarily to prevent it from splitting.
  • Do not rush the simmering stage; the lamb needs sufficient time to turn tender.

Common Mistakes to Avoid

  • The yogurt curdles into small lumps when added to the pot: Always whisk the yogurt smooth and lower the heat or turn off the stove briefly while mixing it into the hot meat.
  • The meat is tough and chewy: The lamb was not simmered long enough. Continue cooking covered on low heat until the meat easily yields to a fork.

Variations

  • Rogan Josh with Hing (Asafetida): Some traditional preparations omit onions and garlic entirely, relying instead on asafetida and ginger powder to build the aromatic profile.

Serving Suggestions

  • Serve hot with steamed basmati rice.
  • Pair with plain flatbreads like roti or naan to soak up the rich red gravy.

Storage & Make-Ahead

Make ahead: The flavor deepens if made a day in advance, making it a great dish to prepare ahead of time.

Refrigerate: Store in an airtight container in the refrigerator for up to 3 days.

Freeze: Freeze in a sealed container for up to 2 months. Thaw overnight in the refrigerator before reheating.

Reheat: Warm gently on the stovetop over medium-low heat until heated through, adding a splash of water if the gravy has thickened too much.

Frequently Asked Questions

Can I use boneless lamb for Rogan Josh?

Yes, boneless lamb shoulder or leg works well, though bone-in pieces add more depth to the gravy as they simmer.

Is Kashmiri red chili powder very spicy?

No, Kashmiri chili powder is valued primarily for its bright red color and mild, fruity heat rather than intense spiciness.

Why did my yogurt curdle in the curry?

Yogurt curdles when added directly to high heat. To prevent this, whisk the yogurt smooth, lower the heat or remove the pot from the stove briefly, and stir it in gradually.

  • 4 pods green cardamom lightly bruised
  • 4 whole cloves

  • 2 tbsp Kashmiri red chili powder adjust for color and mild heat
  • 1 tsp fennel powder saunf
  • 1 cup plain yogurt whisked smooth at room temperature
  • 1 tsp salt or to taste
  • 1 1/2 cups water divided

Equipment

  • 1 Heavy-bottomed pot or Dutch oven Used for browning the meat and simmering the curry evenly.

Method

  1. Heat the cooking oil in a heavy-bottomed pot over medium heat. Add the black cardamom, green cardamom, cloves, and cinnamon stick. Sizzle for about 30 seconds until fragrant.
  2. Add the lamb pieces to the pot. Cook, stirring occasionally, until the meat is lightly browned on all sides, about 8 to 10 minutes.
  3. Lower the heat to medium-low. Stir in the ginger powder, Kashmiri red chili powder, and fennel powder. Immediately add the whisked yogurt in small increments, stirring constantly so it does not curdle. Cook until the yogurt blends into the sauce and the oil begins to separate at the edges, about 5 minutes.
  4. Add the salt and 1 1/2 cups of water. Bring the mixture to a gentle boil, then cover the pot with a lid, reduce the heat to low, and simmer for 45 to 50 minutes, stirring occasionally.
  5. Remove the lid and check that the lamb is fork-tender and reaches an internal temperature of 74°C / 165°F at the thickest piece. If the gravy is too thin, simmer uncovered for a few more minutes until it reaches your preferred consistency. Serve hot.

Notes

Ensure the yogurt is at room temperature and the heat is low before adding it to prevent splitting.
