Lamb Bhuna Recipe

Lamb Bhuna Recipe (Tender Spiced Braised Mutton)

Lamb bhuna is a classic Indian dish known for its thick, clingy masala and deeply concentrated flavors. Unlike many curries that rely on large amounts of added liquid, bhuna relies on gentle pan-roasting—known as bhunai—where the meat and aromatics fry slowly in their own released juices and oil.

This version focuses on building layers of flavor through whole spices, browned onions, and tender cuts of lamb or mutton. The result is a richly coated meat dish with very little leftover sauce, making it ideal to pair with flatbreads or simple rice.

Why This Recipe Works

  • Browning the lamb in batches builds a deep fond on the bottom of the pan, which is later deglazed by the onions and tomatoes to enrich the sauce.
  • Cooking the onions slowly until deeply golden creates the natural sweetness and thick base required for an authentic bhuna texture.
  • Simmering the curry covered on low heat allows the tough cuts of lamb to break down and become tender without drying out.

Ingredient Notes

  • Lamb: Bone-in shoulder or boneless leg cut into bite-sized pieces work best. Bone-in cuts generally yield a richer flavor during long braising.
  • Yogurt: Plain whole-milk yogurt tenderizes the meat and adds a mild tang. Whisk it smooth before adding to prevent curdling in the hot pan.
  • Garam Masala: Added toward the end of cooking to preserve its aromatic oils rather than boiling them away during the long simmer.

If You’re Cooking Outside India

  • Mutton vs. Lamb: In South Asia, mutton usually refers to adult goat meat, while western markets label sheep as lamb. For this recipe, standard grocery store lamb works well, though cooking times may need slight adjustment depending on the age of the meat.
  • Kashmiri Chilli Powder: Used for its bright red color and mild heat. If unavailable, use a mix of standard cayenne pepper and sweet paprika.

How to Make Lamb Bhuna

Browning the Meat

Sear the lamb pieces in oil until browned on all sides to lock in flavor and develop pan fond.

Building the Masala

Sauté whole spices, ginger-garlic paste, and sliced onions until the onions turn deeply golden brown.

Spicing and Simmering

Stir in ground spices and tomatoes, then return the meat to the pan and let it braise slowly until tender.

Cooking Tips

  • Keep the heat at medium-low when reducing the sauce so the spices do not stick or burn to the bottom of the pan.

Common Mistakes to Avoid

  • Adding too much water: Bhuna is meant to be a thick, dry-style curry. Add water sparingly only if the meat is not yet tender and the pan is getting too dry.

Variations

  • Goat Bhuna: Substitute bone-in goat meat for lamb, keeping in mind that goat typically requires a longer simmering time to reach tenderness.

Serving Suggestions

  • Serve hot with freshly made naan or tandoori roti.
  • Pair with simple basmati rice and a slice of fresh onion.

Storage & Make-Ahead

Make ahead: Can be prepared a day in advance; the flavors often improve after sitting overnight.

Refrigerate: Store in an airtight container in the refrigerator for up to 3 days.

Freeze: Freeze for up to 2 months in a sealed container. Thaw overnight in the refrigerator before reheating.

Reheat: Reheat gently on the stovetop over medium-low heat, adding a splash of water if the sauce is too thick.

Frequently Asked Questions

Can I make lamb bhuna without yogurt?

Yes, you can omit the yogurt and use a little extra tomato or a splash of water, though yogurt helps tenderize the meat and adds a rich tang to the sauce.

Ingredients

Main Ingredients
  • 750 g lamb cut into 1.5-inch pieces
  • 3 tablespoons cooking oil divided
  • 2 large onions finely sliced
  • 1 tablespoon ginger paste freshly made
  • 1 tablespoon garlic paste freshly made
  • 2 medium tomatoes chopped
  • 1/2 cup plain yogurt whisked smooth
Spices
  • 2 whole bay leaves none
  • 1 inch cinnamon stick none
  • 3 whole green cardamom pods lightly cracked
  • 1 teaspoon turmeric powder none
  • 2 teaspoons coriander powder none
  • 1 teaspoon Kashmiri chilli powder adjust for heat
  • 1 teaspoon garam masala none
  • 1 teaspoon salt to taste

Equipment

  • 1 Heavy-bottomed pot or Dutch oven Essential for even heat distribution during the long braising process.

Method

  1. Heat 2 tablespoons of oil in a heavy-bottomed pot over medium-high heat. Add the lamb pieces and sear until browned on all sides, about 8 to 10 minutes. Remove the lamb and set aside.
  2. Add the remaining oil to the same pot. Add the bay leaves, cinnamon stick, and green cardamom pods. Add the sliced onions and sauté over medium heat until they turn deeply golden brown, about 12 minutes.
  3. Stir in the ginger paste and garlic paste, cooking for 1 minute until the raw smell dissipates. Lower the heat and add the turmeric, coriander powder, and Kashmiri chilli powder, stirring constantly for 30 seconds.
  4. Add the chopped tomatoes and cook until they soften and oil begins to separate from the mixture. Reduce the heat to low and gradually stir in the whisked yogurt to prevent curdling.
  5. Return the lamb and any accumulated juices to the pot along with the salt. Stir well to coat the meat in the masala. Cover with a lid and simmer on low heat, stirring occasionally, until the lamb is tender and reaches 74°C / 165°F at the thickest piece, about 35 to 45 minutes.
  6. Remove the lid and increase the heat slightly to dry up any excess liquid, frying the masala directly against the bottom of the pan for 3 to 5 minutes. Stir in the garam masala and remove from heat.

Notes

Ensure the heat is kept low when adding yogurt to prevent it from separating.
