Method

  2. Reduce the heat to medium. Add the remaining 1 tablespoon of oil to the same pan. Add the cumin seeds and let them sizzle for 30 seconds. Add the finely chopped onion and cook for 5 minutes, stirring occasionally, until they turn translucent and light golden.
  3. Stir in the ginger-garlic paste and slit green chilies. Cook for 1 minute until the raw smell disappears. Add the turmeric, Kashmiri chili powder, coriander powder, and salt. Stir quickly to coat the onions and cook the spices for 30 seconds.
  4. Add the pureed tomatoes and cook for 5 minutes, stirring frequently, until the moisture evaporates and you see oil starting to separate at the edges of the tomato paste.
