Chicken Biryani Recipe (Layered Spiced Rice and Chicken)

Chicken biryani is a celebration meal made by layering partially cooked basmati rice over a heavily spiced, tender chicken masala, then sealing the pot and cooking it slowly on low heat. This method allows the rice to absorb the rich aromas of the meat and spices without becoming mushy.

This version relies on bone-in chicken pieces for better flavor and long-grain aged basmati rice for distinct, fluffy grains. Taking the time to soak the rice and brown the onions properly forms the foundation of a rich, deeply savory dish.

Why This Recipe Works

  • Soaking the basmati rice in cold water before boiling helps the grains elongate evenly without breaking during cooking.
  • Cooking the chicken and rice separately at first ensures the rice does not overcook while the meat becomes tender.
  • Sealing the pot tightly with a lid traps steam, allowing the rice to finish cooking through gentle heat absorption.

Ingredient Notes

  • Basmati rice: Use long-grain aged basmati rice. Short or medium-grain varieties will not yield the same fluffy, separated texture.
  • Bone-in chicken: Bone-in chicken thighs or a cut-up whole chicken work best because bones release natural gelatin and flavor into the masala.
  • Plain yogurt: Use plain, unflavored yogurt to tenderize the chicken and create a rich base for the gravy.
  • Saffron: Steep saffron strands in warm milk to impart a distinct yellow color and floral aroma to the top layer of rice.

If You’re Cooking Outside India

  • Basmati rice: Found in the international or South Asian aisle of most major supermarkets, as well as Indian grocery stores.
  • Whole spices (cardamom, cloves, cinnamon): Look for whole spice packets in Indian markets or well-stocked spice sections.
  • Ghee: Clarified butter used for rich flavor. Available in many standard grocery stores or South Asian markets.

How to Make Chicken Biryani

Marinating the Chicken

Mix the chicken with yogurt, ginger-garlic paste, ground spices, and salt, then set aside to absorb the flavors.

Parboiling the Rice

Boil soaked basmati rice in salted water with whole spices until it is partially cooked, then drain.

Cooking the Chicken Masala

Sauté sliced onions until golden, add tomatoes and spices, then cook the marinated chicken until tender and thick.

Layering and Dum Cooking

Layer the parboiled rice over the chicken masala, drizzle with saffron milk and ghee, seal the pot, and cook on low heat until done.

Cooking Tips

  • Drain the parboiled rice promptly when it reaches the partially cooked stage so it does not continue softening in hot water.
  • Slice the onions evenly so they brown at the same rate without burning.

Common Mistakes to Avoid

  • Using fully cooked rice for layering: Ensure the rice is only about 70 percent cooked during boiling; it will finish cooking from the steam inside the sealed biryani pot.
  • Adding too much water to the chicken masala: Keep the chicken gravy thick before layering so the final dish remains moist rather than watery.

Variations

  • Mutton Biryani: Substitute bone-in goat or lamb for the chicken, adjusting the meat cooking time until the pieces are tender.

Serving Suggestions

  • Serve hot with cooling cucumber or onion raita.
  • Pair with sliced onions, lemon wedges, and fresh mint leaves.

Storage & Make-Ahead

Make ahead: You can marinate the chicken up to a day in advance and keep it covered in the refrigerator.

Refrigerate: Store leftover biryani in an airtight container in the refrigerator for up to 3 days.

Freeze: Freezing is not recommended as the delicate texture of the basmati rice changes upon thawing.

Reheat: Reheat individual portions gently on the stovetop with a splash of water, or in the microwave until steaming hot throughout.

Frequently Asked Questions

Can I use boneless chicken for biryani?

Bone-in chicken is recommended because it stays juicier and adds more flavor to the gravy, but boneless chicken thighs can be used if adjusted to avoid overcooking.

Why did my rice turn mushy?

Rice turns mushy if it is boiled for too long before layering, or if too much liquid is left in the chicken gravy during the final steaming step.

  • 2 tbsp salt for boiling water
  • 2 pieces green cardamom pods whole
  • 3 pieces cloves whole

  • 2 medium tomatoes finely chopped
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh cilantro leaves chopped
  • 2 tbsp milk warm
  • 1 pinch saffron strands dissolved in warm milk

Equipment

  • 1 Heavy-bottomed pot or Dutch oven Used for cooking the chicken and the final layered dum process.
  • 1 Large pot Used for boiling the basmati rice.

Method

  1. In a bowl, combine the bone-in chicken pieces, plain yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well and let it marinate for 30 minutes.
  2. Rinse the soaked basmati rice. In a large pot, bring the 8 cups of water, 2 tablespoons of salt, cardamom pods, cloves, cinnamon stick, and bay leaf to a rolling boil. Add the drained rice and cook until it is about 70 percent cooked, or firm to the bite. Drain the rice completely.
  3. In a heavy-bottomed pot, heat the ghee over medium heat. Add the sliced onions and sauté until golden brown. Add the chopped tomatoes and cook until soft. Stir in the marinated chicken and cook over medium heat until the chicken pieces are mostly cooked through and the gravy is thick.
  4. Reduce the heat under the chicken masala to low. Evenly spread the drained parboiled rice over the chicken. Sprinkle the chopped mint leaves, chopped cilantro leaves, and the saffron-infused milk over the top of the rice.
  5. Cover the pot with a tight-fitting lid to trap the steam. Cook on low heat for 15 to 20 minutes until the rice is fully tender and the chicken reaches an internal temperature of 74°C / 165°F at the thickest piece. Fluff gently before serving.

Notes

Ensure the chicken is cut into standard curry pieces so it cooks evenly in the gravy.
Serve hot with a side of yogurt raita.
