Chicken Pulao Recipe

Chicken Pulao Recipe (Spiced Indian Chicken & Rice)

Chicken pulao is a comforting, one-pot meal where tender chicken pieces and long-grain basmati rice are simmered together with aromatics and warm spices. Unlike heavy layered biryani, a pulao is simpler to put together and lets the individual flavors of the seasoned rice and meat shine.

This version uses basic whole spices, onions, ginger, garlic, and yogurt to build a savory base before the rice goes into the pot. Success comes down to getting the water-to-rice ratio right so the grains stay separate and fluffy rather than turning mushy.

Why This Recipe Works

  • Sautéing whole spices in oil at the start infuses the fat with aromatic oils that coat the rice grains.
  • Searing the chicken pieces briefly before adding the liquid locks in moisture and builds savory flavor on the bottom of the pot.
  • Simmering the rice covered on low heat allows steam to cook the grains evenly without stirring.

Ingredient Notes

  • Basmati rice: Long-grain basmati rice is essential for the correct texture. Soak it in water for 20 minutes and drain well so the grains lengthen properly without breaking.
  • Chicken: Bone-in, skinless chicken pieces (such as curry cut thighs and drumsticks) yield the most flavorful broth as they simmer. Boneless chicken breast can dry out quickly.
  • Whole spices: Cinnamon, cardamom, cloves, and bay leaves add subtle warmth rather than heavy heat. Tie them in a cheesecloth or fish them out later if you prefer not to bite into them.

If You’re Cooking Outside India

  • Basmati rice: Look for aged long-grain basmati rice in the international or South Asian aisle of major supermarkets, or at Indian grocery stores.
  • Ghee: Clarified butter used for rich flavor. If unavailable, use a neutral cooking oil with a small knob of unsalted butter.

How to Make Chicken Pulao

Prep and Soak

Rinse the basmati rice until the water runs clear, then soak it in water for 20 minutes before draining thoroughly.

Aromatics and Spices

Heat oil or ghee in a heavy-bottomed pot and crackle the whole spices, then sauté sliced onions until golden brown.

Brown the Chicken

Add ginger-garlic paste, green chilies, and chicken pieces, cooking until the chicken turns opaque and lightly browned.

Simmer Rice

Add the drained rice, water, and salt. Bring to a boil, then cover with a tight-fitting lid, reduce heat to low, and cook until the liquid is absorbed and rice is tender.

Cooking Tips

  • Do not over-stir the rice once it starts simmering, or the grains will break and turn sticky.
  • Let the cooked pulao rest covered off the heat for 10 minutes before fluffing with a fork.

Common Mistakes to Avoid

  • Adding too much water: Measure the water carefully against the amount of soaked rice to prevent mushy grains.
  • Using unsoaked rice: Soaking allows the grains to absorb moisture evenly and cook to their full length.

Variations

  • Vegetable Pulao: Replace the chicken with a mix of diced carrots, green peas, and potatoes for a vegetable-packed version.

Serving Suggestions

  • Serve hot with a side of plain yogurt or cucumber raita.
  • Pair with sliced onions, lemon wedges, and fresh mint leaves.

Storage & Make-Ahead

Make ahead: You can chop the onions and marinate the chicken a few hours in advance, keeping it covered in the refrigerator.

Refrigerate: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freeze: Freezing is not recommended as basmati rice can lose its texture and turn mushy upon thawing.

Reheat: Reheat gently on the stovetop with a splash of water, or in the microwave until steaming hot.

Frequently Asked Questions

Can I use boneless chicken for pulao?

Yes, boneless chicken thighs or breasts cut into bite-sized pieces work well. Keep in mind that boneless chicken cooks slightly faster than bone-in pieces.

Why did my rice turn out mushy?

Mushy rice is usually caused by using too much water, over-stirring while simmering, or skipping the soaking and draining step.
