- Clean the chicken pieces and pat them dry with a kitchen towel.
- Make 2 to 3 deep cuts on each chicken piece.
- Add the chicken to a bowl with 1 tablespoon lemon juice, 1/2 teaspoon salt, and 1 teaspoon ginger-garlic paste. Mix well and rest for 15 minutes.
- In another bowl, add thick curd, mustard oil, 1 tablespoon ginger-garlic paste, Kashmiri red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, black pepper powder, kasuri methi, chaat masala, salt, and 1 tablespoon lemon juice.
- Mix everything well to make a thick marinade.
- Add the chicken pieces to the marinade and coat them properly on all sides.
- Cover and refrigerate for at least 4 hours or overnight.
- Take the chicken out of the fridge 20 to 30 minutes before cooking.
- Preheat the oven to 220°C and place the chicken on a lined baking tray or wire rack.
- Bake for 25 to 30 minutes, turning once halfway.
- Brush the chicken with melted butter or oil and bake for another 5 minutes until slightly charred.
- Serve hot with onion rings, lemon wedges, coriander leaves, and mint chutney.

Marination time is not included in the total time.
Use thick curd so the marinade coats the chicken well.
