Ingredients

Halwa Base
  • 1 cup Sooji Fine or medium semolina
  • 1/2 cup Ghee Clarified butter
  • 3/4 cup Sugar Granulated white sugar
  • 2 1/2 cups Water Hot water
  • 1/2 teaspoon Green cardamom powder Freshly ground preferred
  • 2 tablespoons Almonds and cashews Chopped, for garnish

Equipment

  • 1 Heavy-bottomed pan or Kadai Helps roast the semolina evenly without scorching.
  • 1 Small saucepan Used for heating the water and sugar syrup.

Method

  1. In a small saucepan, combine the water and sugar. Bring it to a gentle simmer over medium heat until the sugar dissolves completely, then turn off the heat and keep warm.
  2. Melt the ghee in a heavy-bottomed pan over medium-low heat. Add the sooji and stir continuously with a wooden spoon or spatula. Roast for 8 to 10 minutes until the semolina turns light golden and gives off a nutty aroma.
  3. Lower the heat. Carefully and slowly pour the warm sugar water into the roasted semolina while stirring continuously to prevent lumps from forming.
  4. Cook the mixture on medium-low heat, stirring frequently, until the semolina absorbs all the liquid and thickens into a soft pudding consistency, about 3 to 5 minutes.
  5. Stir in the green cardamom powder. Cover the pan with a lid and let it rest off the heat for 2 minutes. Garnish with chopped nuts and serve warm.

Notes

Adjust the amount of sugar slightly if you prefer a less sweet dessert.
Ensure the water is hot when adding it to the semolina to keep the texture smooth.
