  • 1 cup nylon sev very fine chickpea flour noodles

Equipment

Method

  1. Place the diced boiled potatoes in a small bowl. Toss gently with a pinch of salt and the red chili powder.
  2. Lay the flat puris out in a single, flat layer on your serving plate.
  3. Spoon a small amount of the seasoned potatoes onto each puri, followed by a light scattering of the chopped onions.
  4. Add a few drops of green chutney to each puri, adjusting based on your preferred heat level, then follow with a similar small drizzle of sweet tamarind chutney.
  5. Sprinkle chaat masala evenly across all the puris. Top generously with the nylon sev and chopped fresh coriander leaves. Serve immediately.

Notes

Ensure all chutneys and chopped vegetables are ready before you begin laying out the puris to prevent the base from becoming soggy.
