Ingredients

The Crisp Base & Spiced Layer
  • 24 pieces papdis store-bought flat flour crackers
  • 1 cup boiled potatoes peeled and cut into small 1-cm cubes
  • 1/2 cup cooked chickpeas canned, rinsed and drained, or freshly boiled
  • 1/2 tsp chaat masala divided use
  • 1/4 tsp red chili powder divided use
  • 1/4 tsp roasted cumin powder divided use
  • 1/4 tsp kala namak black salt, divided use
The Yogurt & Chutneys
  • 1 cup plain thick yogurt cold dahi
  • 1 tsp sugar granulated
  • 1/4 tsp salt regular table salt
  • 1/4 cup mint-coriander chutney chilled green chutney
  • 1/4 cup tamarind-date chutney chilled sweet-tangy chutney
The Crunch & Garnish
  • 1/3 cup fine sev nylon sev made from chickpea flour
  • 2 tbsp fresh coriander leaves cilantro, finely chopped
  • 2 tbsp pomegranate arils optional, for color and sweet crunch

Equipment

  • 1 Whisk Used to make the yogurt completely smooth and creamy.
  • 1 Flat Serving Platter A wide, flat plate ensures even layering and prevents the crackers from burying each other.

Method

  1. In a medium bowl, combine the cold plain yogurt, sugar, and regular salt. Whisk vigorously for about 1 minute until the sugar dissolves completely and the yogurt becomes smooth, glossy, and pourable. Keep this mixture in the refrigerator until you are ready to assemble.
  2. In a separate bowl, gently toss the cubed boiled potatoes and drained chickpeas with half of the chaat masala, half of the red chili powder, half of the roasted cumin powder, and half of the kala namak. Ensure the spices coat the pieces evenly.
  3. Place the papdis in a single, slightly overlapping layer across your flat serving platter. Use your thumb to gently press and crack the center of each papdi slightly; this creates a small indentation that helps the toppings rest securely on top.
  4. Spoon the seasoned potato and chickpea mixture evenly over the arranged papdis, ensuring every cracker receives some of the topping.
  5. Stir the chilled yogurt briefly, then spoon it generously over the potato and chickpea layer, making sure to cover most of the papdis so they begin to soften slightly while remaining crisp at the edges.
  6. Drizzle the green mint-coriander chutney and the sweet tamarind-date chutney over the yogurt layer in an alternating pattern, adjust the amounts based on your preferred level of heat and sweetness.
  7. Sprinkle the remaining chaat masala, red chili powder, roasted cumin powder, and kala namak evenly over the chutneys.
  8. Scatter the fine sev generously over the entire plate. Finish by sprinkling the finely chopped coriander leaves and optional pomegranate arils on top. Serve immediately before the papdis lose their crispness.

Notes

For the best texture, keep all wet ingredients cold before assembly.
If you prefer a spicier chaat, increase the amount of green mint-coriander chutney or add a pinch of finely chopped fresh green chilies over the potato layer.
Ensure your boiled potatoes are cold when cubing so they hold their shape without turning mushy.
