- Wash the spinach leaves properly.
- Boil water in a pan and blanch the spinach for 2 minutes.
- Transfer the spinach to cold water, then drain it.
- Blend spinach with green chilies, ginger, and garlic to make a smooth paste.
- Heat oil and butter in a pan.
- Add cumin seeds and let them crackle.
- Add chopped onion and cook until light golden.
- Add chopped tomato and cook until soft.
- Add turmeric powder, red chili powder, coriander powder, and salt.
- Cook the masala for 1–2 minutes.
- Add the spinach paste and mix well.
- Add a little water and cook on low flame for 5–6 minutes.
- Add paneer cubes and mix gently.
- Cook for 2–3 minutes.
- Add garam masala, crushed kasuri methi, and cream if using.
- Mix gently and serve hot.
Notes
Do not overcook spinach after blending, or the color may turn dull.
