Ingredients

Chutney Ingredients
  • 1 cup Mint leaves Packed, fresh tender leaves
  • 1 cup Coriander leaves Packed, fresh leaves and tender stems
  • 1 to 2 Green chilies Roughly chopped
  • 1 teaspoon Ginger Peel and roughly chop
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1/2 teaspoon Cumin powder Roasted or plain
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Sugar Optional, to balance sharp flavors
  • 2 tablespoons Water Cold water, as needed for blending

Equipment

  • 1 Blender or Food Processor A small grinder jar works best for smooth blending.

Method

  1. Place the mint leaves, coriander leaves, green chilies, ginger, lemon juice, cumin powder, salt, and sugar into a blender jar.
  2. Add the cold water. Pulse and blend until a smooth, vibrant green paste forms. Avoid over-blending to keep the color bright.
  3. Transfer to a bowl, taste for salt or lemon, and serve immediately or chill until needed.

Notes

For best color, use ice-cold water when blending to prevent the herbs from oxidizing.
