Ingredients

For the Dal
  • 1 cup masoor dal split red lentils, rinsed
  • 3 cups water plus more if needed
  • 1/2 tsp ground turmeric
  • 1 tsp salt or to taste
For the Tempering (Tadka)
  • 2 tbsp ghee or neutral oil
  • 1 tsp cumin seeds
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 1/2 tsp red chili powder adjust to taste

Equipment

  • 1 Saucepan Medium size for boiling the lentils
  • 1 Small skillet For preparing the spice tempering

Method

  1. Rinse the masoor dal until the water runs clear. In a medium saucepan, combine the rinsed dal, 3 cups of water, turmeric, and salt. Bring to a boil over medium-high heat, then reduce heat to low, cover partially, and simmer for 20 minutes until the lentils are soft and fully broken down. Stir occasionally and add a splash of water if the mixture gets too thick.
  2. In a small skillet, heat the ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the minced garlic and chopped onion, cooking until the onions turn golden brown.
  3. Stir in the red chili powder for a few seconds, being careful not to burn it. Pour the hot tempering directly into the cooked dal, stir well to combine, and simmer for 2 more minutes before serving.

Notes

Adjust the consistency of the dal with warm water before serving if it thickens too much as it cools.
