Ingredients

Noodles and Boiling
  • 200 grams Hakka noodles Or standard wheat noodles
  • 1 teaspoon oil For boiling water
  • 1 teaspoon salt For boiling water
Stir-Fry
  • 2 tablespoons oil For cooking
  • 1 tablespoon garlic Finely minced
  • 1 teaspoon ginger Finely minced
  • 2 tablespoons spring onion White and green parts separated, chopped
  • 1 cup cabbage Thinly shredded
  • 1/2 cup carrot Cut into thin matchsticks
  • 1/2 cup bell pepper Capsicum, thinly sliced
  • 1 tablespoon dark soy sauce Adjust to taste
  • 1 teaspoon green chili sauce Optional
  • 1 teaspoon white vinegar Or rice vinegar
  • 1/2 teaspoon black pepper powder Freshly ground
  • 1/2 teaspoon salt Or to taste

Equipment

  • 1 Wok or Large Skillet A wok allows for high-heat tossing, but a wide skillet works well too.

Method

  1. Bring a large pot of water to a rolling boil. Add 1 teaspoon salt and 1 teaspoon oil. Add the Hakka noodles and cook according to package instructions until just tender (al dente). Drain immediately and rinse thoroughly with cold water to stop cooking. Toss with a few drops of oil to prevent sticking and set aside.
  2. Heat 2 tablespoons of oil in a wok or large skillet over high heat until smoking slightly.
  3. Add the minced garlic, minced ginger, and the white parts of the spring onions. Stir-fry for about 30 seconds until fragrant, taking care not to burn the garlic.
  4. Add the shredded cabbage, carrot matchsticks, and sliced bell pepper. Stir-fry briskly over high heat for 1 to 2 minutes until the vegetables are tender-crisp.
  5. Add the dark soy sauce, green chili sauce, white vinegar, black pepper powder, and salt. Stir well to coat the vegetables.
  6. Add the cooked noodles and the green parts of the spring onions to the wok. Toss everything together vigorously on high heat for 1 to 2 minutes until the noodles are evenly coated and heated through. Serve hot.

Notes

Ensure your vegetables are completely dry before adding them to the wok to prevent steaming.
