Crispy Pesarattu (Green Moong Dal Crepe)

A crispy, protein-rich green gram crepe from Andhra Pradesh that requires absolutely no fermentation. Perfectly golden, fragrant with ginger and cumin, and ready for your breakfast table.

Ingredients
  

  • 200 grams Whole Green Moong Dal Green Gram (Soaked for 4-6 hours)
  • 30 grams Raw Rice Soaked with the dal for crispiness
  • 1 inch Fresh Ginger Peeled and roughly chopped
  • 2 pieces Green Chilies Adjust to heat preference
  • 1 teaspoon Cumin Seeds Jeera (For blending into the batter)
  • 1 teaspoon Salt Or to taste
  • 1 medium Red Onion Finely chopped, for topping
  • 3 tablespoons Ghee or Oil For cooking

Method
 

  1. Rinse 200g of moong dal and 30g of rice. Soak in abundant water for 4 to 6 hours or overnight until completely plump.
  2. Drain water. Blend the soaked mixture with ginger, green chilies, cumin seeds, salt, and about 1/2 cup of water until smooth but finely textured.
  3. Heat a cast-iron tawa on medium. Test with water drops to ensure it sizzles, then wipe clean with a lightly oiled cloth or onion half.
  4. Pour a ladle of batter in the center. Gently but swiftly swirl outward in circles to form a thin, even crepe.
  5. Immediately sprinkle chopped onions and a drizzle of ghee around the edges. Press the onions down gently with a spatula.
  6. Cook until the bottom turns speckled golden-brown and crispy. Fold in half and serve hot.
