  • 1 tsp ginger garlic paste freshly ground
  • 1 tsp black pepper powder ground
  • 1 large egg beaten
  • 3 tbsp cornflour cornstarch
  • 1/2 tsp salt to taste
Sauce and Stir-Fry
  • 2 tbsp cooking oil divided
  • 1 tablespoon garlic finely minced
  • 1 teaspoon ginger finely minced
  • 2 pieces green chillies slit lengthwise
  • 1 medium onion cut into square petals
  • 1 medium bell pepper capsicum, diced
  • 2 tbsp soy sauce dark
  • 1 tbsp red chilli sauce commercial style
  • 1 tbsp tomato ketchup regular
  • 1 tsp vinegar white vinegar
  • 1/2 cup water or chicken broth
  • 1 tsp cornflour mixed with 2 tbsp water for slurry

Equipment

  • 1 Wok or Large Skillet Used for high-heat stir-frying.
  • 1 Mixing bowls For marinating the chicken and mixing the sauce.

Method

  1. In a mixing bowl, combine the chicken pieces, soy sauce, ginger garlic paste, black pepper, egg, cornflour, and salt. Mix well and let rest for 15 minutes.
  2. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the chicken pieces in a single layer and pan-fry until golden brown and cooked through, reaching an internal temperature of 74°C / 165°F at the thickest piece. Remove and set aside.
  3. In the same pan, add the remaining oil over high heat. Add the minced garlic, ginger, and green chillies, stirring for 30 seconds until fragrant. Add the onion petals and diced bell peppers, tossing briskly for 2 minutes until slightly tender.
  4. Stir in the dark soy sauce, red chilli sauce, tomato ketchup, and vinegar. Pour in the water and bring the mixture to a simmer.
  5. Pour in the cornflour slurry while stirring continuously until the sauce thickens and turns glossy. Return the cooked chicken to the pan, toss until well coated, and remove from heat.

Notes

Adjust the number of green chillies depending on your preference for heat.
Ensure the chicken reaches 74°C / 165°F before removing it from the pan during the frying step.
