Ingredients

For the Spice Paste
  • 2 tablespoons coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon black peppercorns
  • 4 whole dried red chilies Adjust to taste
  • 3 tablespoons grated coconut Fresh or frozen
For the Curry
  • 500 grams chicken Bone-in, cut into pieces
  • 2 tablespoons oil Neutral cooking oil
  • 1 sprig curry leaves
  • 1 cup shallots Sliced
  • 1 tablespoon ginger garlic paste
  • 1 medium tomato Chopped
  • 1/2 teaspoon turmeric powder
  • 1 cup water As needed for gravy
  • 1 teaspoon salt To taste

Equipment

  • 1 Heavy-bottomed pan or Kadai Used for roasting spices and cooking the curry.
  • 1 Spice grinder or blender Used to grind the roasted spices and coconut into a paste.

Method

  1. Heat a dry pan over medium-low heat. Add coriander seeds, cumin seeds, fennel seeds, black peppercorns, and dried red chilies. Dry-roast until fragrant and slightly darkened, about 3 to 4 minutes. Add the grated coconut in the last minute and roast until golden.
  2. Transfer the roasted spices and coconut to a grinder. Add a few tablespoons of water and blend into a smooth paste.
  3. Heat oil in the same pan over medium heat. Add the curry leaves and sliced shallots. Cook until the shallots turn translucent and light golden at the edges.
  4. Stir in the ginger-garlic paste and cook for 1 minute until the raw aroma disappears. Add the chopped tomatoes and turmeric powder, cooking until the tomatoes soften and blend into the oil.
  5. Add the chicken pieces and salt. Sauté for 5 minutes until the chicken changes color on the outside.
  6. Add the ground spice paste and water. Stir well to coat the chicken, bring to a simmer, cover, and cook over medium-low heat for 20 minutes until the chicken is tender and reaches an internal temperature of 74°C / 165°F at the thickest piece, and the oil separates on top.

Notes

Adjust the amount of black peppercorns and dried red chilies to match your preferred spice level.
