Finely chop your boiled potato (100g), onion (80g), and deseeded tomato (80g) into uniform, tiny cubes. This matters because uniform pieces distribute evenly in every single bite, preventing any single mouthful from being overwhelmed by one flavor.
In a large mixing bowl, combine the toasted puffed rice, crushed papdi, roasted peanuts, and half of the fine sev. Toss them together lightly with your hands. You want to see an even distribution of dry textures before introducing any moisture.
Add the chopped potatoes, onions, tomatoes, and fresh coriander to the bowl. Sprinkle the chaat masala, roasted cumin powder, and Kashmiri red chili powder evenly over the mix. Stir immediately so the dry spices lightly coat the damp vegetables, releasing a tangy, earthy aroma.
Pour the sweet tamarind chutney and spicy green chutney over the mixture, followed by a squeeze of fresh lemon juice. Stir rapidly from the bottom up. Keep your movements light and quick to avoid bruising the ingredients. The puffed rice should look lightly coated, not drenched.
