Jeera Aloo Recipe

Jeera Aloo Recipe (Cumin-Spiced Potatoes)

Jeera Aloo is a straightforward North Indian side dish made by tossing tender boiled potatoes in a sizzling base of cumin seeds, turmeric, and fresh green chilies. It comes together quickly with everyday pantry staples and pairs effortlessly with flatbreads or lentil stews.

This version relies on precooking the potatoes until just tender, then frying them briefly in oil or ghee so the spices coat the edges. The key to success is letting the cumin seeds crackle fully in the hot oil without burning, releasing their warm, earthy aroma into the dish.

Why This Recipe Works

  • Boiling the potatoes ahead of time ensures they cook evenly all the way through without burning on the outside.
  • Blooming the cumin seeds in warm oil releases their essential oils directly into the fat, flavoring every piece of potato.
  • A finishing pinch of dry mango powder adds a gentle, bright tang that balances the earthy spices.

Ingredient Notes

  • Potatoes: Waxy or all-purpose potatoes hold their shape best when cubed and tossed in the pan without breaking apart.
  • Cumin seeds: The primary aromatic for this dish. Use fresh whole seeds rather than powder for the correct texture and flavor.
  • Amchur (dry mango powder): Adds tartness at the end of cooking. If unavailable, a small squeeze of fresh lemon juice works as a substitute.

If You’re Cooking Outside India

  • Amchur powder: Can be found in South Asian grocery stores or online. Use lemon juice as a backup if you cannot find it.
  • Asafoetida (hing): A pungent yellowish powder used in small pinches. Find it at Indian grocers or online; omit if unavailable.

How to Make Jeera Aloo

Boil and Cube

Boil the potatoes until tender enough to pierce easily with a fork, then peel and cut them into uniform cubes.

Bloom Spices

Heat oil in a pan, add the cumin seeds and let them sizzle and darken slightly in the hot fat.

Toss and Crisp

Add the ground spices and potato cubes, tossing gently until the potatoes are coated and lightly browned at the edges.

Cooking Tips

  • Let boiled potatoes cool completely before cutting them into cubes to prevent them from mashing up in the pan.
  • Keep the heat at medium so the cumin seeds toast properly without turning bitter.

Common Mistakes to Avoid

  • Adding potatoes while they are still hot and wet: Ensure boiled potatoes are completely cool and dry so they form a nice edge in the pan rather than sticking.

Variations

  • Fresh Coriander Variation: Garnish generously with freshly chopped cilantro leaves just before serving for an extra layer of fresh aroma.

Serving Suggestions

  • Serve warm alongside hot phulkas or puris.
  • Pair with plain dal and steamed rice for a comforting everyday meal.

Storage & Make-Ahead

Make ahead: You can boil and cube the potatoes a day ahead and store them in the refrigerator.

Refrigerate: Store leftovers in an airtight container in the refrigerator for up to 2 days.

Freeze: Freezing is not recommended because cooked potatoes turn grainy and lose their texture.

Reheat: Reheat gently in a skillet over medium heat with a tiny splash of oil until warmed through.

Frequently Asked Questions

What can I substitute for amchur powder?

If you do not have dry mango powder, add a squeeze of fresh lemon juice right at the end after turning off the heat.
