Ingredients

Main Ingredients
  • 1 kg mutton bone-in, cut into curry pieces
  • 3 large onions thinly sliced
  • 1 cup plain yogurt whisked smooth
  • 3 tbsp ghee or cooking oil
  • 1 tbsp ginger paste fresh
  • 1 tbsp garlic paste fresh
  • 2 tsp Kashmiri red chili powder for color and mild heat
  • 2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 2 cups water divided
  • to taste salt
Whole Spices
  • 2 inch cinnamon stick
  • 4 whole green cardamom pods slightly crushed
  • 4 whole cloves
  • 1 teaspoon cumin seeds

Equipment

  • 1 Heavy-bottomed pot or Dutch oven Used for browning meat and simmering the curry.

Method

  1. Heat 2 tablespoons of ghee in a heavy-bottomed pot over medium heat. Add the sliced onions and fry, stirring frequently, until they turn deeply golden brown and crisp. Remove half of the onions and set aside for garnish. Crush the remaining onions once cooled.
  2. In the same pot with the remaining oil, add the cumin seeds, cinnamon stick, green cardamom pods, and cloves. Let them sizzle for 30 seconds until fragrant.
  3. Add the ginger paste and garlic paste, cooking for 1 minute until the raw aroma disappears. Add the mutton pieces and sear them over medium-high heat until lightly browned on all sides.
  4. Stir in the Kashmiri red chili powder, coriander powder, turmeric powder, and salt. Reduce the heat to low, then slowly add the whisked yogurt and crushed fried onions, stirring continuously to prevent curdling.
  5. Pour in 2 cups of water and bring the mixture to a gentle simmer. Cover the pot with a tight-fitting lid, reduce the heat to low, and cook for 50 to 60 minutes, stirring occasionally, until the mutton is fork-tender and the oil separates on top.
  6. Stir in the garam masala. Check that the meat is tender and fully cooked through. Garnish with the reserved fried onions before serving hot.

Notes

Adjust the cooking time depending on the cut and age of the mutton; older meat may require extra time and water to become tender.
