Ingredients

Main Ingredients
  • 1 kg Carrots Peeled and grated
  • 4 cups Whole milk Full fat
  • 1/2 cup Sugar Adjust to taste
  • 4 tablespoons Ghee Divided
  • 1/2 teaspoon Green cardamom powder Freshly ground
  • 2 tablespoons Mixed nuts Slivered almonds and pistachios for garnish

Equipment

  • 1 Heavy-bottomed pan or Kadai Essential for preventing the milk and sugar from burning.
  • 1 Box Grater Used to grate the carrots evenly.

Method

  1. Combine the grated carrots and whole milk in a heavy-bottomed pan. Cook over medium heat, stirring occasionally, until the milk has almost completely evaporated, about 35 to 40 minutes.
  2. Add 3 tablespoons of ghee and the sugar to the pan. Stir well and cook over medium-low heat until the liquid released by the sugar evaporates and the mixture thickens, about 10 to 12 minutes.
  3. Stir in the remaining tablespoon of ghee, cardamom powder, and half of the nuts. Cook for 2 more minutes until the halwa begins to leave the sides of the pan. Garnish with the remaining nuts and serve warm.

Notes

Stir frequently towards the end of cooking to prevent sticking.
