Chicken Balti Recipe (Quick British-Indian Curry)

Chicken Balti is a popular British-Indian restaurant style curry known for its bright, tomato-forward sauce, tender chicken pieces, and crisp bell peppers. Unlike slow-simmered curries, a balti is traditionally cooked quickly over high heat, giving the sauce a distinctively fresh, vibrant flavor.

This home-kitchen version keeps the speed and flavor of the restaurant style while using standard cookware. By cooking the aromatics and spices briskly before adding the chicken and tomatoes, you build a rich, cohesive base without needing hours of simmering.

Why This Recipe Works

  • Cooking the spices briefly in hot oil before adding aromatics helps release their fat-soluble flavors directly into the base.
  • Using a combination of finely chopped onions and grated or pureed tomatoes creates a thick, smooth sauce without requiring long reduction times.
  • Adding sliced bell peppers toward the end of cooking ensures they retain a slight crunch rather than turning mushy.

Ingredient Notes

  • Chicken breast or thighs: Boneless, skinless chicken thighs stay juicier during the high-heat cooking process, but chicken breasts work well if cut into uniform bite-sized pieces.
  • Garam masala: Added toward the end of cooking to preserve its complex aromatic oils rather than letting them boil away during the simmer.
  • Kashmiri chilli powder: Provides a bright red color and mild warmth. If unavailable, use regular mild paprika mixed with a pinch of cayenne pepper.

If You’re Cooking Outside India

  • Kashmiri chilli powder: Often found in South Asian grocery stores or online. Mild paprika serves as a workable color and heat substitute.
  • Balti bowl: A traditional round-bottomed steel balti bowl is not required; a standard heavy-bottomed skillet or wok works effectively for this high-heat curry.

How to Make Chicken Balti

Aromatic Base

Sauté onions, ginger, and garlic in oil until the onions turn light golden brown at the edges.

Spice Blooming

Stir in the ground spices and cook briefly until fragrant, taking care not to burn them.

Simmering the Chicken

Add the chicken and tomatoes, simmering until the chicken is cooked through and the sauce thickens.

Final Veggies and Finish

Toss in the bell peppers, finish with garam masala and cilantro, and cook until the peppers are tender-crisp.

Cooking Tips

  • Cut the chicken into even, bite-sized pieces so they cook through at the same rate.
  • Keep the heat at medium-high during the initial onion sauté to develop a rich foundation quickly.

Common Mistakes to Avoid

  • Adding the bell peppers too early: Add the peppers during the last few minutes of cooking so they keep their crisp texture and bright color.
  • Burning the ground spices: If the pan looks too dry when adding spices, splash in a tablespoon of water to prevent scorching.

Variations

  • Lamb Balti: Substitute boneless lamb shoulder cut into small cubes. Increase the simmering time and add a splash of water as needed until the lamb is tender.

Serving Suggestions

  • Serve hot with warm naan or garlic flatbread.
  • Pair alongside plain basmati rice or jeera rice.

Storage & Make-Ahead

Make ahead: The curry base can be chopped and prepped a few hours in advance.

Refrigerate: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freeze: Freezing is not recommended due to the fresh bell peppers, which can turn mushy upon thawing.

Reheat: Reheat gently in a covered skillet over medium-low heat until piping hot throughout.

Frequently Asked Questions
